That constraint produced a kitchen with very few ingredients and unusually strict ideas about what to do with them: pork roasted until the rind crackles, potatoes boiled and then either drowned in sauce or caramelised in sugar and butter, butter on everything, and dark sour rye bread underneath half the national repertoire. Seasoning is deliberately narrow — salt, pepper, bay, allspice, mustard, dill, and vinegar for the pickle jar — so the flavour work happens through technique and contrast rather than spice. What saves it from being heavy is the Danish instinct for a sharp counterweight: pickled beetroot beside fatty meat, mustard beside pork, vinegar-sweet red cabbage beside a roast. Anyone who arrived expecting the tweezers-and-foraging New Nordic restaurants of the last two decades should know that those grew out of this cooking, not instead of it.","Everything starts with rugbrød. Danish rye bread is not a lighter European rye but a dense, dark, sour wholegrain loaf, built on a rye sourdough and packed with cracked rye kernels and seeds, baked in a tin and left a full day before anyone is allowed to slice it. It is eaten daily, mostly at lunch, and it is structural: it is the plate for smørrebrød, the vehicle for leftovers, the thing children take to school. A Dane judges a household partly by its bread. Wheat bread exists, but it belongs to breakfast and to the baker — franskbrød, literally \"French bread\", still carries the label of something foreign.\n\nPork is the protein. Denmark has raised and exported pigs on an industrial scale for well over a century, and the domestic kitchen uses the whole animal without ceremony: belly fried into crisp slabs for stegt flæsk, minced shoulder and veal shaped into frikadeller, salted and smoked cuts boiled into pea soup, and the Christmas flæskesteg whose scored rind is the single most scrutinised piece of cooking in the Danish year. Beef appears mainly as minced patties — hakkebøf, pariserbøf — and fish, despite all that coastline, is mostly preserved: herring pickled in vinegar, curry or sherry, and cold-smoked or hot-smoked around the island smokehouses.\n\nThe sauce culture is quiet but non-negotiable. Danes make persillesovs (a white parsley sauce), brun sovs (a brown gravy built on meat drippings and browned flour), and remoulade — a sweetened, mustardy, finely chopped mayonnaise relish that Danes put on far more things than the French ever intended. Nearly every hot main plate arrives with potatoes and one of these sauces, and a Dane will judge a meal by whether there was enough of it.\n\nSweetness and sourness carry the balance. Red cabbage is stewed with vinegar and sugar; cucumbers are sliced paper-thin and left in vinegar for an hour; beetroot is pickled by the jar; apples are cooked with pork. On the sweet side the country runs on cardamom, almonds and cream — æbleskiver at Christmas markets, risalamande with hot cherry sauce on Christmas Eve, rødgrød med fløde all summer, and the laminated pastries the rest of the world simply calls Danish and Danes call wienerbrød, Viennese bread, because that is where the technique came from.\n\nRegional difference is real but subtle. Jutland is the pork-and-potato heartland with the plainest cooking and the strongest attachment to it; Funen claims the country's best fruit and its own thick pancakes; Bornholm out in the Baltic smokes herring in chimney-stacked smokehouses; and Copenhagen has spent twenty years turning all of the above into a restaurant movement while still eating open sandwiches for lunch on Fridays.",[13,14,15,16,17,18,19,20,21,22],"rugbrød (dark sour rye bread)","pork","butter","potatoes","pickled herring","remoulade","dill","cardamom","red cabbage","mustard","Lunch is cold and eaten with cutlery. Butter goes edge to edge so the rye stays dry, and the topping should cover the bread completely; bare bread showing at the corners reads as carelessness. Beer accompanies the herring, with snaps taken alongside in small shared toasts. Hot dinner comes early, usually around six, and begins when everyone is seated and someone says velbekomme.
