7 Cheddar Recipes From 6 Cuisines.

A firm cow's milk cheese whose flavour and behaviour change with age. Young cheddar is mild and melts smoothly; well-aged cheddar tastes sharp and crumbly but breaks and turns oily under heat unless you help it with a starch or a little acid. Grate it rather than cubing it for anything melted, and add it off direct heat. It carries macaroni cheese, toasted sandwiches, scones and Welsh rarebit, and the orange colour is dye, not a flavour difference.
